My name is Danny T Quinto, I have been hired to help change the way we feed our children in Salida. For many years and for reasons beyond our control the standards have dipped. These standards have become what is known as ” a product of the environment.” In Salida, our school board and superintendent “Darryl Webb” have made a commitment to changing this environment. With forward thinking and my knowledge as an executive chef we will feed our kids better more nutritious food. In the upcoming blogs there will be pictures , videos and many important documents that will help parents and kid get a better understand of how we will get to our ultimate goal. That goal is to build a food service program sustainable for the long haul. You will be able to follow and give important ideas on the direction of our program.
The first step in this process is to introduce an open door policy. With that in mind feel free to post a comment or hopefully a constructive piece of knowledge that will help our children. I can assure you that my commitment to this project is 100%. As time goes on you will get to know me and my background as a chef in some of the best 5 star resorts on this planet. For Annie and I, Salida is our home and as you all know once you find your place (heart) in Salida there is no reason to look elsewhere, This is Home!!!!!
I was hired on March 19th 2012. I was told at that time by the state that until I got certified through the Colorado Division of Education, that I could not touch any process of the food production. So I studied the federal and state regulations and believe me there are many. I also studied our Nutrikids software program that is used in our district. In June I got certified in the new menu program handed down from the federal government this is mandated to be put in use this upcoming school year 2012-2013 . And in July I spent five days in the big city of Denver and got certified through the CDE to be the SFA (School Food Authority) and to be able to run a school food program in this state. The week was long and there were many presenters from every facet of process. Each one gave us a unique look at why the regs are in place and how we need to put them into play in our schools. I will explain more about this project in upcoming blogs.
All this aside my staff and I have the passion and I will teach them the skill sets to build a strong foundation of culinary knowledge that will not only feed our kids better but in the end teach them to choose healthier options in thier growing years and beyond.
